This is a meal prepared with just plantains that are baked in an oven at 450 degrees for 10 to 15 minutes.
Recipe:
1. Preheat oven to 450 degrees.
2. Coat a non-stick cookie sheet with cooking spray.
3. Cut the ends off plantains and peel.
4. Cut each plantain into 1/2 inch slices.
5. Arrange in single layer and coat tops with cooking spray.
6. Bake, turning occasionally, for 10-15 minutes until plantains are golden brown and tender.

For this you need: Olive Oil, a small chopped onion, a chopped carrot, a chopped celery rib, two minced garlic cloves,
about 4 cups of broth, two green plantains, a stemmed and chopped cilantro, cumin, a bay leaf, and some salt and pepper.
Recipe:
1. Heat oil in large saucepan over medium heat.
2. Add onions, carrots, celery and garlic.
3. Cook, uncovered, for 3-4 minutes, or until onions are soft but not brown.
4. Add 4 cups of chicken stock/broth and bring to boil over high heat.
5. Add plantains, most of the cilantro (reserve a few tablespoons for garnish), cumin, and bay leaf.
6. Season with salt and pepper.
7. Return to boil.
8. Reduce heat to medium-low and simmer, uncovered for 40-50 minutes or until plantains very tender.
9. Remove and discard bay leaf.
10. Transfer half the soup to blender; puree until smooth.
11. Return to the pan.
12. If soup is too thick, add a little more stock/broth.
13. Season with more salt/cumin if desired.
14. Enjoy

1/4 of a diced red onion, (optional) a dash of garlic salt
Recipe:

For this you need: 3/4 loaf of banana bread, (optional) sugar.
Recipe:
1. Preheat the oven to 325F and line a baking sheet with parchment or silicone.
2. Slice the loaf into "sticks" (I cut slices, then cut those in half width-wise) and place on the sheet.
3. Sprinkle evenly with sugar.
4. Bake for 20-30 minutes, depending on how moist the banana bread was originally. Cool on the sheets.
